Menu:


All members of the Michelin Club went for the dinner menu including the optional cheese, where the following dishes were served:


CANAPES - Salmon/ Foie Gras/ Black Truffle/ Celeriac.
FENNEL - Sweet Fennel Paste with Oyster and Dill; Dried Gooseberries and Cucumber.
TOMATO - Roast Scallop with Raspberry and Whey; Roe Ice Cream with Tomato and Coriander.
LOBSTER - Roasted Tail with Pickled Carrots and Sea Buckthorn; Chopped Claws and Summer Cabbage

RABBIT - Charred Lettuce and Sunflower Seeds
BEEF SHORTRIB - Braised with Girolles, Bone Marrow and Baby Artichoke

CHEESE
FIG - Fig Leaf Ice Cream and Caramelised Almonds
APPLE - Apple Mousse with Hazelnut and Maple Syrup Ice Cream






Wine:


The Wine was picked based on some great recommendations from the Sommelier, where we had the following:


White: 1 x 2018 Lapola Dominio do Bibei, Ribeira Sacra (Spain) 

Red: 1 x NV Cupano Rosso, Tuscany (Italy)

Port: 3 gl. 20 year old Tawny (Portugal)

Dessert: 1/2 x Weingut Helmut Lang Rheinriesling Eiswein 2015 (Austria)





Extras:


We got some nice chocolates and jellies after dinner but unfortunately because of Covid-19 we were not allowed to get the kitchen tour.
