Dorset Crab - Mint / Cauliflower / Granny Smith apple / Curry
Orkney Scallop - Avocado / Ponzu / Seaweed / Rice
Shelfish - Bay Leaf / Tapioca / Dashi / Smoked
Foie gras - Fig / Anise / Almond
Turbot - Spinach / Verbena / Seaweed butter OR Veal
Welsh Organic Lamb 'Rhug Estate' / Grouse - Aubergine / Harissa / Soya
Vacherin Mont d'Or - Onion / Walnut
+ Additional Cheese Board
Lime - Rum / Mint
Black Fig - Green Tea / Pistachio / Fig Leaf
Illanka Chocolate - Basil / Lime
Wine:
The Wine was picked with help from the Sommelier, where we had the following:
White: Bardin Sancerre 2015 (France).
Red: Fiorita Brunello 2010 (Italy).
Dessert: Carmes Rieussec 2009 (France) + 3 gl. of Rivesaltes Tuile and 1 gl. of Arzuaga 2013.
Extras:
We got 3 tasters before dinner and some chocolate and chessecake after dinner. When we left the restaurant the ladies got a small box with some nice cakes.
For the first time the whole Michelin club went for the kitchen tour in their busy hours, where the Executive Chef showed us the great kitchen.
