Menu:


2 of the members from the Michelin Club went for the Core Classics menu and the 2 others for the Core Seasons menu, where the following dishes were served:



2 x Isle of Mull scallop tartare - sea vegetable consommé
2 x Steamed Colchester crab - sabayon, consommé, caviar
2 x 'Potato and roe' - dulse beurre blanc, herring and trout roe
2 x Cep tart - caramelised yeast, Fluffetts Farm Egg yolk
2 x Roasted monkfish - Morecambe Bay shrimps, Swiss chard, brown butter
2 x Cornish sea bass - cockles, clams, coastal herbs and lovage
2 x 'Lamb carrot' - braised lamb, sheep's milk youghurt
2 x 'Cheese and onion' - alliums, aged Cheddar and onion broth

2 x Rhug Estate vension - heritage beetroot, cherry and pink peppercorn
2 x Lamb, hogget, mutton - celture, savoury and black cardamom

2 x Cheese plate (additional)
2 x 'Core apple'
2 x 'The other carrot'
2 x Pear and verbena - poire Williams sorbet
2 x 'Core-teser' - chocolate, malt, hazelnut



Wine:


The Wine was picked based on some nice recommendations from the Sommelier, where we had the following:


White: 1 x 19 Sauvignon Blanc Clos Marguerite (New Zealand)

Red: 1 x 15 Teroldego Foradori (Italy)

Port: 1/2 x 96 Quinta de Vargellas Taylor's (Portugal)

Dessert: 3 gl. x 05 Chateau Rayne-Vigneau Sauternes (France)


Extras:


We got 4 tasters before dinner (Pea and mint gougère - Jellied eel, toasted seaweed and malt vinegar - Crispy smoked chicken wing, beer, honey and thyme - Foie gras parfait and madeira) and 2 tasters after dinner (Warm chocolate and lavender tart - 'Sauternes and Banyuls'). We also met Clare Smyth who was both greeting us when we arrived and came out when we left so we could thank her and get a picture with her. Because of Covid-19 we were not allowed to visit the kitchen.
