The woman in the Michelin Club went for the Tasting Menu, whereas the guys went for 4 dishes from the A la Carte menu (+ the cheese). The following dishes were served:
Tasting Menu:
Dorset CRAB, Celeriac and caviar
GUINEA FOWL and DUCK FOIE GRAS layers, pickled condiment
‘Sauté gourmand’ of LOBSTER and truffled chicken quenelles
Fillet of JOHN DORY, green asparagus from Provence
DUCK from Burgaud house, chickpeas and morels
Assortment of four FRENCH CHEESES
1 x BABA like in Monte-Carlo/1 x CHOCOLATE from our Manufacture in Paris and pine nuts
A la Carte Menu:
2 x GUINEA FOWL and DUCK FOIE GRAS layers, pickled condiment
2 x Native LOBSTER, peas ‘à la Parisienne’
2 x Fillet of BEEF Rossini crunchy cos lettuce, Périgueux jus
2 x Assortment of four FRENCH CHEESES
1 x BABA like in Monte-Carlo/1 x CHOCOLATE from our Manufacture in Paris and pine nuts
Wine:
The Wine was picked with help from the Sommelier, where we had the following:
White: Saumur Domaine Guibertau 2014 (France).
Red: Blaufränkisch Reserve Moric 2012 (Austria).
Port: 4 gl. of LBV Nieport.
Dessert: 1/2 bottle of Clare Valley Risling Cordon Cut Mount Horrocks 2014 (Australia).
Extras:
The restaurant served some nice small bread snacks before dinner and the guys who went for the A la Carte menu also got a small mushroom dish to clean the palette in the beginning. After dinner we got chocolates and macarones and the ladies got a small box with some nice Chamonix cakes when we left the restaurant.
Ingrid, Annette and Carlos had a great tour of the kitchen, where we met the Executive Chef, who showed us the very busy kitchen with 25 staff members.
