Menu:


We all 4 had to pick the same menu so decided to go for the 6 courses Journey menu + 2 additional cheese courses - so had the following dishes served:


Chancre Crab - Madras curry, Vietnamese coriander, Burnt lemon condiment
Berlingots - Pasta Parcels filled with St Cera Trombetta courgette, green apple
Geranium, shisho, Chartreuse

Cornish Turbot - Glazed with pastis Bell pepper and agastache Lavender and curry sabayon
Hereford Beef Fillet - Marinated in gin, dill seeds and coffee Baby aubergine tempura Along with oxtail confit

Saint-Marcellin - Fig and port chutney
2 x Cheese Selection
2 x Blackberry Alpaco chocolate and Korerima crémeux, Blackberry sorbet, Scent of saffron
2 x White Millefeuille Tahitian vanilla, jasmine jelly, Voatsiperifery pepper cloud


Wine:


We got some help from the Somelier to pick the wines but he also recommended some really expensive ones, where we decided to find some cheaper alternatives - so had the following:


White: 2 x St Peray Pic Chapoutier (French)

Red: 1 x Chianti Classico Isole E Olena (Italy)

Port: 3 x gls 10yo Tawny Port Fonseca (Portugal)

Dessert: 1/2 x Royal Tokaji Late Harvest (Hungary)



Extras:


Furthermore we got 4 tasters before dinner and finally for the first time after COVID-19 we were back doing the kitchen tour. We got to say hello to the Head chef Marc Mantovani and saw the kitchen in action when it was still quite busy, so very nice.
