All 4 members in the Michelin Club went for the Menu Exceptionel, where the following dishes were served:
Cheese Souffle Cooked on Double Cream
Foie Gras and Confit Carrot Layers, Ice Wine Vinegar Jelly, Pomegranate & Radish
Stone Bass and Pastilla, Scented with Arabian Spices, Fennel, Red Rice & Meat Jus
Langoustines and Hereford Snail in a light Hollandaise Sauce flavoured with Basque Pepper and Parsley
Black Pudding, Crumbled Egg, Crackling & Spicy Tomato Chutney
Roast Fillet of Galloway Beef, Potato Cake with Bacon & Red Wine Sauce
Seletion of French and British Farmhouse Cheese
Cripsy Filo Tart with Pears and Salted Butter Caramel Sauce & Vanilla Ice Cream

The Wine was picked with excellent help from the Sommelier, where we had the following:
White: 2010 Viogn Cuill & 2011 Sanc Prieur
Red: 2011 St Joseph Epine
Dessert: Banyuls Res

The restaurant furthermore served 2 extra tasters before dinner.
Annette and Carlos also had a nice tour of the kitchen while it was still quite busy - so saw this in full action.
