Menu:


At Dinner we only had the choice to pick from the A La Carte menu - so all 4 members in the Michelin Club went for 3 courses + 2 shared cheese boards. The following dishes were served:


Starters:

2 x Meat Fruit: Mandarin, chicken liver & foie grass parfait, grilled bread.

1 x Salamagundy: Chicken oysters, salsify, marrow bone & horseradish cream.

1 x Hay Smoked Mackerel: Lemon salad, gentleman's relish, wood sorrel & smoked roe.

Mains:

1 x Roast Sea Bass: Mussel & seaweed ketchup, salmon roe & sea rosemary.

1 x Roast Iberico Pork Chop: Spelt, ham hock & Robert sauce.

1 x Hereford Ribeye: Mushroom ketchup & triple cooked chips.

1 x Fillet of Aberdeen Angus: Mushroom ketchup & triple cooked chips.

Side Dishes:

1 x Green Beans.

1 x Mashed Potatoes.

Desserts:

2 x British Cheese:  Oat cakes, Yorkshire chutney & cider apple.

2 x Baked Sussex Pond Pudding: Lemon caramel & goats milk ice cream.

1 x Brown Bread Ice Cream: Salted butter caramel, pear & malted yeast syrup.

1 x Chocolate Bar: Passion fruit jam & ginger ice cream.



Wine:


The Wine was picked with help from the Sommelier, where we had the following:


White:  Sancerre Flores (France).

Red: 2009 Brunello (Italy).

Port: 3 gl of 2009 Nieport.

Dessert:  2012 Jurancon.



Extras:


The restaurant furthermore served  a nice taster after dinner.


Annette and Carlos also had a nice tour of the kitchen before the dessert menu - so was still quite busy.
