Menu:


All of us went for the 7 courses Surprise menu 'Carte Blanche' - "Complete Freedom to act as one wishes" - so had the following dishes served:


Lentil & chestnut cappucciono
Colchester oyster vichyssoise - Imperial gold caviar, buttermilk, smoked pickled onion
Scallops from the Isle of Skye - broccoli, coastal herbs, miso beurre blanc

Cornish brill - morteau sausage, hazelnut, Vin Jaune
Aynho Park fallow deer - maitake, hay cream, whiskey, green peppercorn

Twice baked cheese soufflé - Vacherin, Gruyére, pickled walnut
A taste of Champagne - brioche, Henri Giraud Ratafia Champenois Solera
"Mont Blanc" - smoked chestnut, rum, caramel



Wine:


We got very little help from the Somelier to pick the wines where we had the following:


White: 1 x Chablis Viellis Vignes Domaine Daniel Etienne Defaix 20 (French)

Red:1 x Plan B Shiraz 2017 (Australia)

Port: 4 gl. GLS Fonseca 85 (Portugal)

Dessert: 1/2 Merlot / CS Eiswein Familie Reinish 17 (Austria)



Extras:


Furthermore we got 3 tasters before dinner and 3 tasters after dinner. We also got a tour of the Kitchen at the end of the night where they were mainly cleaning.
